Healthy Curry Chicken Salad

It’s been a while since we have done a recipe or food post so we thought we would share our new favorite recipe. This recipe is so simple, easy, yummy, and HEALTHY. It’s perfect on its own for a small snack or even sandwiched between two pieces of bread. Give it a try and let us know what you think.

Ingredients:

2 stems of green onion (chopped)

3 sticks of celery (chopped)

1 cup of sliced grapes

1/2 cup of craisins

2 cups of pulled or chopped chicken (pulled from a rotisserie chicken is the easiest way)

1 cup of greek yogurt

1/2 tablespoon of curry powder

Salt and pepper (as much or as little as you would like)

Directions:

In a big bowl combine the greek yogurt, curry powder, and salt/pepper. After that is mixed in well, start to incorporate all the other ingredients into the bowl.

Once it has been mixed well, let it sit in the refrigerator to marry together.

BAM! How easy was that? Hope y’all like it as much as we do. We have been making this all week.
